3 Tbs. olive oil
1 shallot, chopped
2 (14 oz.) cans quartered artichoke hearts in water, drained
Salt and pepper
1/4 C. parsley leaves, chopped
2 Tbs. capers, drained
16 sea scallops
1/2 C. dry vermouth

Directions:
Directions:
Heat a non stick skillet over medium high heat. Add olive oil and the chopped shallots to the pan. Sauté for 1 minute; add the artichoke hearts and toss to heat through. Season artichokes with salt and pepper and combine with parsley and capers. Transfer artichokes to a serving dish. Wipe out skillet and return to heat, raising heat a bit. Season the scallops with salt and pepper. Add 1 Tbs. olive oil to pan; add scallops. Sear scallops in a single layer to caramelize, 2 minutes on each side. Add vermouth and cook 1 to 2 minutes. Arrange the scallops in vermouth over top of artichokes. Makes 4 servings.
