2 lbs. yellow squash, sliced and cooked fork tender, drained
1 onion chopped fine
1 (8 oz.) package cornbread stuffing
1 stick melted butter
1 can cream of chicken soup
1 small can chopped water chestnuts
1 (12 oz.) jar chopped pimento
1 (8oz.) container sour cream

Directions:
Directions:
In a bowl, mix melted butter and stuffing. Place half in bottom of a casserole dish. Press firmly. Combine squash, onion, chestnuts, and pimento. In a separate bowl, mix together sour cream and soup; add to squash mixture. Place in casserole dish on top of stuffing. Add remaining stuffing mixture to top of casserole. Bake at 350º for approximately 45 to 50 minutes.
