4 large McIntosh or Empire apples, cored
1/2 lemon or 1 tbsp. lemon juice
4 tbsp. butter, cut into pieces
3/4 c. whole-grain cereal with dried fruit (recommended: Mueslix)
or 3/4 c.instant oatmeal
3/4 c. brown sugar
1 tsp. ground cinnamon
1/4 tsp. nutmeg
1/4 c. chopped walnuts or walnut pieces or pecans
1 pint vanilla ice cream or caramel ice cream

Optional toppings: caramels, raisins
* 2 ounces, 1/8 cup, golden raisins, chopped
Whipped topping, canister

Preheat oven to 425 degrees F.

Trim the tops and scoop out the center and the seeds of each apple and rub or sprinkle the edges of the trimmed apple with the lemon. In a medium bowl, combine the butter, cereal (or oatmeal) brown sugar, cinnamon, nutmeg and walnuts. Fill the apples with the cereal mixture. Set the apples upright in muffin tins and bake until tender and bubbly, about 20 minutes. Transfer to serving dishes, top with ice cream and serve hot.
