2 racks baby back pork ribs, about 4 pounds
2 tbsp Essense (recipe follows)
1 bottle dark brown ale
1/2 bottle Sweet Baby Ray's barbecue sauce

Essence:
2 1/2 tbsp paprika
2 tbsp salt
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme

Combine all ingredients thoroughly and store in airtight jar or container

Rub ribs on both sides with Essence. Place in large sealable bag (yeah! Get to use a Zip Loc, Cathy!), cover with beer and seal. Marinate in the refrigerator at least 8 hours, preferably overnight.

Remove ribs from the bag and bring to room temp.

Preheat oven to 325. Line a large roasting pan with aluminum foil, lay the ribs on top, and tightly cover with foil. Roast for 2 hours.

Remove foil, baste with Sweet Baby Ray's barbecue sauce on both sides and continue baking 30 minutes. Flip ribs over, baste again, and cook another 30 minutes.

Emeril has his recipe for a great barbecue sauce for these ribs, but I take the easy way out. I don't think you can beat Sweet Baby Ray's! :)
