4 to 6 lbs. lean, well-trimmed baby back ribs
boiling water
1 c. dry sherry
1/2 c. soy sauce
2 cloves garlic, crushed
2 tbsp. dry mustard
3 tbsp. grated ginger root
1 c. orange marmalade
1/4 c. lemon juice
2 tbsp. soy sauce
2 tbsp. drained horseradish

Place the ribs is a large pot and cover with boiling water. Let sit for 5 minutes and drain. This will remove the excess fat. Combine the sherry, soy sauce, garlic, mustard and ginger root and mix well. Pour over the ribs and marinate at least 4 hours (preferably overnight), turning and brushing with the marinade occasionally. Preheat the oven to 400º. Place ribs in a shallow roasting pan and brush with the marinade. Bake for 30 to 40 minutes, basting with the marinade or more sherry or turning occasionally. Prepare a sauce by combining the orange marmalade, lemon juice, soy sauce and horseradish. Place in a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Spoon sauce over ribs and return to oven for 5 minutes to glaze. Pass additional sauce on the side. To barbecue: Heat the coals until hot. Grill the ribs, basting with the marinade, until tender, about 20 to 30 minutes. Baste with the sauce the last 5 minutes of cooking.
