2 cups all purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups low fat buttermilk
1/2 cup (1 stick) unsalted butter, melted
2 large eggs
cooking oil spray, for waffle iron
1 cup fresh or frozen blueberries OR 1 cup chopped pecans

In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt; set aside. In a large bowl, whisk together buttermilk, butter, and eggs; add flour mixture, and mix just until batter is combined.
Heat waffle iron according to manufacturer's instructions; spray with oil. Pour batter onto iron, leaving a 1/2 inch border on all sides. Spread if necessary. Close iron; cook until waffles are golden brown and crisp, 3-5 minutes each. Serve with toppings of your choice.

My mom gave me this recipe and the boys in our house gobble these waffles up! They are so good, we don't even put butter and syrup on them. It took me a while to get the hang of using my waffle iron, but I have since become a pro and can get these on my hungry toddler's plate in a matter of minutes. Perfect for lazy Saturdays.
