2 tbsp. butter
1 lb. andouille sausage
1 large red bell pepper, diced
1 large onion, diced
3 ribs of celery, diced
8 minced garlic cloves
2 large tomatoes, chopped
1 lb. shrimp, peeled
1/2 lb. diced halibut
1 bay leaf
3 cups rice, rinsed
6 cups water
1 pint cleaned oysters
2 bunches green onions, sliced
1/4 tsp. hot sauce


Dry seasonings: salt, pepper, garlic, cayenne pepper, thyme, basil, oregano, paprika, and onion powder

Cut sausage into 1/4-inch slices. Saute sausage in butter. Add bell pepper, onion, celery, garlic, and hot sauce. Season with salt, pepper, garlic, cayenne pepper, thyme, basil, oregano, paprika, and onion powder. Add tomatoes, shrimp, and fish. Add rice. Reduce heat, cover, and simmer for 15 minutes or until rice cooked. Serve.
