Fish pieces cut into bite size pieces
3 T. pickling salt
3/8 c. sugar
2 t pickling spice
1 med onion sliced
white vinegar

Directions:
Directions:
Fill quart jar 3/4 full of cut up fish, layering the onion in with it. Add pickling spice and salt. Fill remainder of jar with white vinegar. Let stand for 14 days, shaking occasionally to distribute ingredients.

This is Grandma Kaiser,s recipe.
We have done it mostly with Northern because of their bones, the pickling will dissolve the bones.
Probably works best with the white fleshed scale fish rather than salmon, trout or catfish.
