1/4 cup butter
1 cup granulated sugar
1 egg
3 ripe bananas, mashed
2 cups all-purpose flour
1 tsp. baking soda, dissolved in 3 tsp. sour cream or yogurt
1/2 tsp. salt

Directions:
Directions:
Preheat oven to 350º; lightly grease 8x4 loaf pan.

In large bowl, cream together butter and sugar. Beat in egg and mashed bananas. Mix in flour, salt, and baking soda mixture until combined. Pour into prepared loaf pan. Bake in oven for 1 hour. If top begins to brown too quickly, decrease heat slightly.
