Crust:
1 cup flour
1/4 cup salted butter
1/4 cup powdered sugar

Filling:
4 eggs, lightly beaten
2 cups sugar
1/2 tsp. baking powder/soda
1/4 cup flour
1/4 cup lemon juice (about 2 lemons)
The rind of 1 lemon (Do not use peels from squeezed lemons. Recommended: Grate a whole lemon with the smaller part of a cheese grater.)

To make crust, soften butter in microwave so it's easier to mix. Then use a mixer and combine the butter, flour, and powdered sugar. It will turn into little balls of flour/butter mix. Pat this flat into a 9x13 greased baking pan. Bake at 350º for 15 to 20 mins. Be sure to keep an eye on the crust - it should turn golden brown.

To make filling, mix all ingredients and pour over hot crust. Immediately put back into oven and bake at 350º for another 15 to 20 mins. Do not overcook the filling or it will lose the jelly-like texture and taste eggy. When the top just starts turning golden brown, take it out.

When done, let cool and then sprinkle with powdered sugar. Cut into bars.

Makes about 16 bars.
