2 egg whites
1/8 tsp. cream of tartar
1/2 tsp. vanilla
1/2 cup sugar
1 cup chocolate chips
1/2 cup finely chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 350º.

Melt chocolate chips over a double boiler or in the microwave; stir very well until melted and then stir until smooth. Set aside. Allow to cool but not harden.

With electric mixer beat egg whites with the cream of tartar until peaks form. Beat in vanilla. Add the sugar in 3-4 batches and continue to beat until stiff peaks form.

FOLD the cooled chocolate into the egg white and sugar mixture until uniform in color. FOLD in walnuts, if using.

Spoon teaspoonfuls onto a greased cookie sheet approximately 1 inch apart. Bake for 10 minutes. (The top should be dry but do not over-bake.) Cookies should have a crunchy top and chewy bottom.
