Souffle:

1 lb. carrots
3 eggs
1/3 cup sugar
3 Tbsp. flour
1 tsp. vanilla
1 stick butter or margarine, melted (1/2 cup)
Nutmeg, dash
Salt, pinch

Topping:

(Do not mix together until just before it is applied)
1/2 cup crushed cornflakes
3 Tbsp. brown sugar
4 – 6 Tbsp. butter or margarine, melted

Directions:
Directions:
Boil carrots until very soft.
Preheat oven to 350º.
Put eggs and carrots in a blender and puree. Add remaining soufflé ingredients and blend.
Pour into a 1 1/2 qt. pan or soufflé dish. Bake for 40-45 minutes.
Thoroughly mix ingredients for topping. Spread evenly over top of the soufflé and bake an additional 5 to 10 minutes until topping is lightly browned.
Serve hot.
