2/3 c whole fresh or frozen strawberries - thawed (I usually do more so, I will have leftovers for the frosting)
1 1/2c flour - sifted
1 t baking powder
1/4 t salt
1/4 c whole milk - room temp
1 t vanilla
1/2 c unsalted butter- room temp
1 c sugar
1 large egg - room temp
2 large egg whites - room temp

Frosting:
3 T. strawberry puree
1 c unsalted butter - firm and slightly cold
Pinch of salt
3 1/2 c powdered sugar
1/2 t vanilla
Directions for Frosting: Beat butter and salt until light and fluffy. Slowly add sugar. Add vanilla and puree. Do not over mix or frosting will incorporate too much air. Frosting should be dense and creamy, like ice cream, frost cooled cakes.

Preheat Oven 350. Process strawberries - about 1/3 c puree. Whisk together dry ingredients. Mix milk, vanilla, & puree - set aside. Cream butter on med high until light and fluffy. Slowly add sugar, slowly add eggs and whites. Slowly add 1/2 flour mixture. Add milk mixture, remaining flour and blend. Bake 22-25 minutes.Makes 12 cupcakes or one 9" round cake. Cool and frost.
