30-35 apples (Grannie Smith apples work best)
4 1/2 cups sugar
1 cup corn starch
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
10 cups water
3 tbsp. lemon juice

Directions:
Directions:
In a pan mix together sugar, cornstarch, salt, cinnamon and nutmeg. Add water and bring to boil, stirring constantly until thickened. Add lemon juice. Keep hot over low heat. Peel, slice and pack apples in hot clean quart jars until you have 7 quarts. Pour mixture over apples and seal with hot lids and bands. Process in hot water bath for 20 minutes.
