1 lb. farfalle (bowtie) pasta
8 slices Bacon, cooked crisp
3 Tbsp. Butter
2 Tbsp. Flour
2 1/2 cups Milk
Ground nutmeg to taste (optional)
2 1/2 cups grated white cheddar cheese
1 Tbsp. prepared Horseradish
1/3 cup finely chopped flat-leaf Parsley
2 Scallions, finely chopped

Cook pasta, according to directions. Preheat broiler.
Melt butter in saucepan, whisk in flour, then milk.
Season with salt, flour and nutmeg. Cook until reduced, about 5 minutes. Stir in 2 cups cheese, until melted, then remove the sauce from the heat and stir in horseradish and bacon. In a casserole dish, combine the pasta with the sauce and top with the parsley, scallions and remaining 1/2 cup of cheese. Broil until browned - 3 to 4 minutes.

I have used Pepper Jack cheese instead of cheddar, and left out the horseradish. Both ways are good.
