Tex-Mex Brisket Recipe

2-4 pound brisket
1/2 cup cider vinegar
1/2 cup ketchup
1/2 cup barbecue sauce
1/2 cup dark brown sugar
1 pkg Lipton onion soup mix
*Optional potatoes and carrots, peeled and cut up
If the brisket is 3 pounds or larger, double the sauce recipe.

Directions:

1) Mix all ingredients in a bowl.
2) Sear the brisket on both sides in a frying pan -- 2-3 minutes.
3) Put the brisket in a large roasting pan -- and potatoes and carrots if desired.
4) Cover with sauce and make a foil "tent" over the pan. Bake at 350 degrees, 1 hour for each pound of brisket (i.e., a cook a 2 pound brisket for 2 hours).
5) Baste with sauce while its cooking, adding water if necessary. The longer it cooks the better it is.
Let cool before slicing. This freezes very well.
