5 c sliced fresh peaches (8 med)
3/4 c sugar
2T tapioca
1 T lemon juice
1/8 tsp cinnamon
pinch salt
1 T butter, cut into bits
2- 9" pie crusts (see p. 98)
1 tsp sugar for topping

Directions:
Directions:
Mix 1st 7 ingredients. Line a pie pan with bottom crust and pour in peach mixture. Cover with top crust. Seal, flute and prick crust. Brush with cold water. Sprinkle with sugar. Bake on lowest rack of oven at 400º for 40-50' or till brown and bubbly.
