4 cups fresh, seeded red sour cherries
2 T. quick-cooking tapioca
1/2 cup cherry juice
1 cup sugar
1 unbaked pie crust

Directions:
Directions:
Mix cherries, tapioca, juice and sugar and let stand for 15 minutes. Fill pie crust with cherry mix. Lattice, a second crust or crumbs may be put on top of cherries.
Bake in hot oven, 400º for 45 minutes to 1 hr.

Fresh cherry pie is a favorite in June when the cherries are in season. We pick them at the orchard, making sure we have enough to bake some fresh pies as well as freeze cherries for another pie in the winter. Joan's favorite job as a child was to pit a red dish pan full of sour cherries- watch out for those pits!
