16 cups of chopped, peeled tomatoes
4 cups chopped onion
4-5 cups chopped green peppers
1 cup chopped jalapeno peppers
2 1/2 c. white vinegar
3/4 cups sugar
1 12 oz. can tomato paste
1/3 cup canning salt
2 tsp garlic salt
2 tsp cumin
2 tsp pepper
1 tsp alum
2 tsp chili pepper

Directions:
Directions:
Boil all ingredients except tomato paste, uncovered, for 1 1/2 hours. Add the can of paste during the last 10 minutes of cooking. Pour into hot jars and seal with lids. Process as for tomatoes. You can also cool and freeze.

This is one of the versions of salsa that I have made when I got carried away with planting too many tomato plants.
