6 C shredded potatos
3 C flour
1 tsp baking powder
[can put 1/2 cup quick oats in as well]
1 gal ham broth
Melted Butter

Directions:
Directions:
1 gal ham broth made by cooking end portions/shank old fashiond ham or flavor with ham soup stock.

Boil ham shank in water, maybe a gallon or so. 1-2 hrs or more. The longer the better.

Take out meat, bone, fat and while water is simmering, [not boiling] drop potato balls in water


Shred potatoes and mix with flour/baking powder, oatmeal. Press in to balls. [You can rinse your hands with water if to sticky]

Cook for about an hr. Sample to make sure they are cooked through by mashing.

When finished, mash and put melted butter. Serve with sliced ham on the side, Yum !
