5# roast salt and pepper to taste
3 tbsp olive oil or lard 2 lg. onions chopped
2 celery stalks chopped 20 oz. ketsup
16 oz stewed tomatoes 1/2 c vinegar
1/4 c. packed brown sugar 2 tbsp chili powder
1 tsp oregano 1 tsp basil
1 tsp salt 1 tsp ground cinnamon
1/4 tsp tabasco sauce 1/4 c. worcestorshire sauce
1 tbsp liquid smoke

season roast with salt and pepper. Heat olive oil in lg. oven safe pot. Brown roast on all sides. Remove from, pot
Add onion, celery, and garlic to pot cook until soft. Add ketsup and tomatoes, vinegar, brown sugar, chili powder, basil, oregano. cinnamon, salt, tabasco sauce, worcestershire sauce, liquid smoke. Mix well and simmer 5 minuets. Return meat to pot baste sauce over meat and bake 350 degrees for 3 hours baste every 30
minuets. Cool, Slice thin return meat to pot with sauce and simmer 1 hour.
serve on hard rolls
