3 cups milk
4 egg yolks
lemon zest
10 tbsp sugar (heaping)
10 tbsp flour (heaping)

Directions:
Directions:
Mix sugar and yolks. Add flour and 1 cup milk.
Put 2 cups milk in heavy saucepan with lemon peel.
Pour yolk mixture into milk in pan. Cook on medium until boiling stirring constantly.
Remove from heat and cool in pan stirring occasionally.

Use to fill between layers of italian sponge cake. Optionally add cherries to cream layer.
