1 1/2 pound boneless chicken breast cut into 1 inch cubes
2 tsp kosher salt
1/2 tsp ground black pepper
1/4 pound salt pork cut into 1/2 inch cubes
1 to 3 medium cloves peeled and minced garlic
1 1/2 tsp fennel seeds lightly crushed
1/2 tsp hot red pepper flakes
1/4 c ice water
4 feet of casing if desired

Mix chicken with salt pork and spices. Refrigerate and marinate overnight, grind the mixture together. You can adjust any of the spice to your taste. The garlic is very strong so we usually go with 1 clove, if you like it a little hotter add more pepper flakes. Add the ice water, it makes it easier to form patties. Before you form patties, fry a small sample to check your spices, make any adjustments you might like. Form patties or stuff your casings

This is the basic recipe, add pesto or other flavors, it's a healthy alternative to pork sausage. I've tried this with a package of already ground turkey or chicken, it's work just fine. Not quite as tasty.
