2 firm tomatoes, diced
4 oz pimentos, finely chopped
1 tbsp minced garlic
2 tbsp chopped olives (I use green olives)
2 tbsp olive oil
2 tbsp balsamic vinegar

Directions:
Directions:
Toss ingredients.
Brush thinly sliced Italian bread with olive oil and put in 425 degree oven until toasted. Rather than putting the tomato mixture on the bread before serving, I use a large platter and put the tomato mixture in a small bowl in the middle surrounded by the bread and let guests serve themselves.
