2/3 C. butter or margarine
1 C. water
1 1/2 C. flour
1/2 tsp. salt
4 eggs

Directions:
Mix together, flour & salt. Bring water to slow boil, add butter, melt; immediately stir in flour, salt mixture. Remove from heat, beat until mixture leaves side of pan and forms a smooth ball. Let cool 5 minutes. One at a time add in eggs, mixing until slickness disappears. Drop on oiled cookie sheet with round soup spoon, or using a pastry tube make 4"x1 1/2" strips. Bake @ 400º for 13 min. Turn oven down to 350º & bake another 30 min. ( do not open oven).
Fill with sweetened whip cream or French Custard.

French Custard
1/3 c sugar
1 T flour
1 T cornstarch
1/4 tsp salt
1 1/4 C milk
1 slightly beaten egg yolk
1 tsp vanilla
1/2 C whipped cream or cool whip
Combine sugar, flour, cornstarch and salt. Stir in milk. Cook and stir until mixture thickens and boils, boil 2 min. longer, add egg yolk, cook until boils again, take off heat add vanilla. Cool. Stir until smooth, fold in cream or cool whip. Fill cream puff shells. Drizzle chocolate glaze over the top. OR use the "Quick" Custard filling;
1 large package (5.1 oz) instant vanilla pudding
2 1/2 C cold milk
1 C cool whip, or whipped cream
In a bowl, beat pudding mix and milk according to package directions, fold cool whip or whipped cream into pudding, fill cream puffs. Drizzle with chocolate glaze.
