2 C. brown sugar
2 C. cooked pumpkin
1 C oil
2 tsp. vanilla
4 C sifted flour
2 tsp.baking soda
2 tsp baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
1 C chopped nuts
2 C raisins (optional)

Directions:

Mix together sugar, pumpkin,oil,& vanilla. Sift together dry ingredients. Blend two mixtures together well. Add nuts & raisins. Bake @ 350º for 12 min.

Frost with Penuche Frosting;
In a saucepan, combine 3 T butter, 1/2 C brown sugar, bring to a boil, cook and stir 1 minute. Cool about 10 minutes, add 1/4 C milk, beat smooth. Add enough powdered sugar (about 2 cups) to spreading consistency. These cookies are soft and moist, they pack well in lunches and are very flavorful!
