The night before, peel and grate potatoes into a bowl and cover with water. Set bowl in fridge overnight. In the morning, drain potatoes and set aside.cook bacon until crisp and set aside, save all bacon grease. Heat up pan for potatoes with half of the grease. Drain water from potatoes and add to heated pan and fry until done. For the dirty eggs, use the pan you cooked the bacon in and add more grease to it. Crack eggs two at at time into the pan and do no flip them, instead, baste them with the hot bacon grease in pan. Serve and enjoy!
