Parsley Almond Rice Recipe

2 C. uncooked rice
1/2 C. margarine
4 C. water
2 T. chicken soup base
1/4 C. chopped parsley
1/4 tsp. oregano
1/4 tsp. sage
1/4 tsp. poultry seasoning
1/4 C. almonds
1/2 tsp. salt

Directions:
Directions:
Saute rice in 1/4 C. margarine in a heavy 2 qt. sauce pan just until golden. Add water & chicken base. Cover tightly. Simmer 25 - 30 min., until all liquid is absorbed. Remove from heat. Stir in seasonings. Meanwhile, melt remaining 1/4 C. margarine in a small skillet. Stir in almonds. cook until golden. add to rice. Toss lightly. Serve at once.

I also like to add cooked wild rice to the finished dish. It has a taste like stuffing, but is a nice alternative to the bread based stuffing.
