1 box jiffy corn muffin mix
1 - 2 C. corn
1 C chopped onion
4 eggs
dash hot sauce or red pepper flakes to taste
Seasoning salt ( I use Johnnies)
Cooking oil

Directions:
Directions:
Combine all ingredients, corn may be canned, frozen, or leftover corn cut from the cob. Put 1/4 inch oil in fry pan, heat to medium, drop large spoonful of mixture into oil, flatten with the back of the spoon to form patties. Cook until browned, flip to other side until browned and center is cooked. Sprinkle with salt. Serve with honey or syrup.

We started making these one year when fire restrictions were put on after we started a summer trip.....I had the mix for cornbread, but no way to bake it without a campfire. So, the fritter was born! It is very tasty, with the crispy browned edges and seasoning salt. I often make the fritters when we have baked salmon. I usually use the leftover corn from our corn on the cob, but frozen or canned works too.
