2 pounds red potatoes, cut in quarters
1 large onion, sliced in half moons
1 green bell pepper, sliced in strips
1 red bell pepper, sliced in strips
1/2 lb. mushrooms, sliced
olive oil for saute
1/2 tsp. garlic powder
1/2 tsp. Italian seasoning
pinch crushed red pepper, or more to taste
salt and pepper to taste
2 tbsp. parmesean cheese

Directions:
Directions:
In a bowl, toss potato chunks with 2 tbsp olive oil and spices and cheese. Lay on a baking sheet and bake at 375º until tender, turning once after about 20 minutes.

In a large skillet, saute onions in olive oil for 1-2 minutes. Sprinkle with the same spices added to the potatoes, to taste. Add bell peppers and saute until soft and onions are almost translucent. Add mushrooms and continue to saute.

When potatoes are finished roasting, toss with veggies and enjoy!
