juice of 1/4 of an orange
juice of 1/2 of a lime
1 avocado seeded and scooped out of skin
2 T roasted and charred Roma tomatoes, diced
1 Serrano pepper roasted, seeded and diced
1 T medium diced red onion
1 t cilantro
sea salt, to taste

Directions:
Directions:
Squeeze juices into bowl. Add avocado and coarsely chop. Add onion, roasted tomato, Serrano and cilantro. Fold into avocado mixture. Add salt (more is better).
Result should be crudely chopped - not mashed.

Tip from Boudro's wait staff: For roasted tomatoes and Serrano peppers, you chop up 10 Roma tomatoes to 1 Serrano pepper and roast it over a fire. Then use 1/2 cup of this mixture for tomatoes in this recipe.
Donnas has used fire-roasted sundried tomatoes that worked really well in this recipe. This is the best quacamole she has ever tasted! When she goes to San Antonio, Boudro's is always the first stop for dinner and always orders their guacamole!
