2 cups flour
1/4 tsp. baking powder
1/2 tsp. salt
4 large eggs, separated (set aside whites)
2 cups buttermilk (see note)
4 tbsp. butter, melted and cooled
1/2 tsp. cream of tartar

Directions:
Directions:
In a bowl combine flour, baking powder and salt. In separate bowl, whisk together egg yolks, buttermilk and butter. In 3rd bowl, beat egg whites until frothy, add cream of tartar. Beat until stiff. Add dry ingredients to buttermilk mixture, whisking to combine. Fold in egg whites. Heat griddle. Use about 1/4 cup batter per waffle or enough batter to fill waffle iron.

Personal Notes:
To replace buttermilk with dry buttermilk, combine 1/2 cup dry buttermilk with flour, baking powder and salt. Replace liquid buttermilk with 2 cups water and whisk together with egg yolks and butter. Continue following above recipe.
