3 pounds frying chicken pieces
3 tbsp. vegetable oil
1 onion, chopped
1 green pepper, chopped
1 clove garlic, minced
1/3 cup soy sauce
28 oz. can tomatoes, chopped
1/4 tsp. cayenne pepper
10 oz. pkg. frozen cut okra, thawed and drained (optional)

Directions:
Brown chicken pieces thoroughly in hot oil in Dutch oven or deep skillet, remove. Add onion, green pepper, and garlic, saute until onion is translucent. Stir in soy sauce, tomatoes and cayenne, bring to boil. Arrange chicken pieces in sauce. Cover and simmer 50 minutes, turn pieces over once. Stir in okra, cover and simmer 10 minutes, or until okra is tender. Serve over hot rice.
