1 1/2 cup sugar
1/3 cup corn starch
1/3-1/2 cup lemon juice, freshly squeezed
3 eggs, separated (set whites aside)
1 1/2 cups water
2 tbsp. butter
2 tsp. lemon rind, finely grated

MERINGUE

3 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar
1 tsp. vanilla

Directions:
Directions:
In sauce pan combine sugar and corn starch. Blend in water. Bring to boil over medium heat and cook, stirring constantly until thick, about 5 minutes. Remove from heat, stir small amount of hot mixture into beaten egg yolks. Return egg mixture to pan. Return to boil and cook 1 minute, stirring constantly. Remove from heat, add lemon peel and butter, slowly stir in lemon juice. Pour into cooled, baked pastry shell. Cover with meringue and bake in 425º oven until brown.
For meringue; beat egg whites and cream of tartar until frothy. Gradually beat in sugar 1 tbsp. at a time. Continue beating until mixture is stiff and glossy.
