Cajun Seasoning:
1 tbsp dried basil leaves
1 tbsp dried oregano leaves
1 tbsp paprika
1 tsp dried thyme leaves
1 tbsp cayenne pepper
1 tbsp garlic powder
1 tsp ground mace
1 bay leaf, crumbled

Beans:
1 lb dried red kidney beans
1 tsp cajun seasoning
4 beef bouillon cubes
1/2 tsp cayenne pepper
1 garlic clove, minced
1 lb precookied smoked turkey or beef sausage,
cut into bite sized pieces
4 cps cooked white rice

Directions:
Directions:
1) To prepare cajun seasoning combine all ingredients in the bowl of a food processor or spice grinder; process unitl well combined.
2) Store in zip top plastic bag.
3) Rinse beans. Place in a large stockpot and add enough water to cover by 3 inches. Let stand overnight.
4) Drain beans and return to stockpot or dutch oven.
5) Cover with water. Add 1 tsp cajun seasoning ( you'll have some left over).
6) Add bouillon cubes, cayenne pepper and garlic.
7) Bring a boil. Reduce heat to low and cook until beans are tender, stirring occasionally, about 1 1/2 hrs.
