2 cups flour
15 oz. Ricotta
1 egg
1 yolk
2/3 cup grated cheese (Romano or parm or mixture)

Directions:
Process all in food processor. Knead together on floured surface. If too soft refrigerate 1 hour. Divide into 4 parts. Roll into ropes cut into 1/2 inch pieces and shape by rolling down the back of a fork. Boil in salted water just until they rise to the top. Drain and serve with favorite sauce.
