4 English Muffins sliced
8 thin slices of cooked ham
8 eggs
1 soft avocado
Cheese Sauce

Cheese Sauce:
1 T butter
1 T flour
1 Cup milk
1 Cup shredded Cheddar cheese
1/2 T Worcestershire Sauce
1 tsp dry mustard
1/8 tsp. salt
Dash of Cayenne pepper

Directions:
Directions:
Toast English muffin halves. Place ham slices on each muffin half. Poach eggs; place on ham slices. Place avocado slices around poached eggs. Serve with Cheese sauce.
To make Cheese Sauce:
Melt butter in saucepan over low heat and add flour. Stir until thick. Remove from heat and add salt, cayenne pepper, milk, cheese, Worcestershire sauce and mustard. Heat over medium heat beating vigorously with wire whisk until bubbles form. Heat 1 additional minute. Makes 1 Cup.
Use immediately spooning over each prepared muffin half.

I remember going to Mom's condo after she sold her house and having these for breakfast on many a Sunday morning. She served it with a fresh fruit salad, hashbrowns and brewed to perfection coffee, juice and milk. She had a way of making you feel like royalty.
