2 C. grated carrots
1/2 of a 20oz can crushed pineapple
3/4 C. raisins. Don't like raisins, use dried cranberries instead.
1- 2 T. mayo

Directions:
Directions:
Mix all together, before serving add mayo. The pineapple add lots of moisture so only add enough mayo. to make it slightly creamy.

This is such a simple salad, the hardest part is grating the carrots! Popular with all the groups, every bit as good with dried cranberries, maybe even better!
