Ingredients:  
3 tbsp (tablespoons) butter
3 tbsp minced shallots (they are halfway between onions/garlic)
3 tbsp brandy (use a cheap kind)
t tbsp green peppercorns (not that easy to find…look like hard, small capers).
Smash them so they break up….I use a coffee grinder
1 tbsp Dijon mustard
1 crushed beef bouillon cube
1 cup heavy cream

Directions:

1.melt butter
2.sauté (stir) shallots in butter until they are ‘clear’….about 2 min.
3.add brandy and reduce by about half (this condenses flavors)
4.add crushed peppercorns, mustard, crushed bouillons cube, and cream.
5.bring to a simmer (below the boiling point….)

I usually do this in batches of about 4 times these amounts. This freezes well and is good with all meats
