1 can (8 oz) lump cooked or imitation crabmeat
½ c. diced red bell pepper
2 tbl plus 2 tsp mayonnaise
2 tbl fresh parsley, chopped
1 tbl fresh chives, chopped
1 tbl lime juice
1tbl Dijon mustard
2 tsp Parmesan cheese
4 to 5 drops hot pepper sauce
4 oz Italian bread, cut into 16 slices

Preheat and line a broiler pan with foil. If using real crabmeat, carefully remove any cartilage. Drain canned crabmeat. In a medium bowl combine crabmeat, bell pepper, mayonnaise, parsley, chives, lime juice, mustard, Parmesan cheese and hot pepper sauce; blend well. Spread 1 tbl of the crab mixture on each slice of bread. Place the crostini on the broiler pan and broil 4” from the heat for 5-6 min. or until lightly browned.
