3 lb chuck roast or pork butt roast
1 Tbsp oil
1/2 c onion, chopped
1/2 c brown sugar
1 tsp. dry mustard
1 tsp. salt
1/4 tsp black pepper
1/8 c BBQ sauce
1 rib celery, diced
2 tsp paprika
1/2 c cider vinegar
1 Tbsp Worcestershire sauce
1 c ketchup
1 c water

Directions:
Directions:
Trim fat off meat. Brown on all sides in oil. Place in roaster or Dutch oven. Combine rest of ingredients and pour over meat. Bake covered at 325º for 3 hours turning a couple of times. Remove meat and shred with fork and knife removing fat and bone. Return meat to sauce. Serve on buns. Freezes nicely.
