4 C. flour
2 1/2 C. sugar
4 tsp. baking soda
4 tsp. cinnamon
1 tsp. salt
4 C. grated carrots
1 C. raisins
1 C. chopped pecans
1 C. sweetened shredded coconut
2 apples, peeled, cored and grated
6 large eggs
2 C. vegetable oil
4 tsp. vanilla

Directions:
Directions:
In bowl, sift flour, sugar, baking soda, cinnamon and salt. Stir in carrots, raisins, pecans, coconut and apples.
In another bowl, beat eggs with vegetable oil and vanilla and stir mixture into flour mixture until just combined. Spoon batter into well-greased muffin pan cups.

Bake 350º for 35 minutes or springy to touch. Cool for 5 minutes and then remove from tins.
