1 lob ground beef
1 small onion, diced
1 large carrot, julienned
3 stalks of celery, chopped
2 cloves of garlic, minced
2 14.5 oz can crushed tomatoes
1 15 oz can red kidney beans
1 15 oz can great northern beans
1 15 oz can tomato sauce
1 16 oz can V-8 juice
1 T white vinegar
1 1/2 t salt
1 t oregano
1 t basil
1/2 t pepper
1/2 t thyme
1/2 t (1/2 pkg) ditali pasta (short little tubes)

Directions:

Brown the Ground Beef in a large saucepan, Drain.
Add onion, carrot, celery and garlic and Saute for 10 minutes. Add remaining ingredients, except pasta, and simmer for 1 hour. About 50 minutes into the simmering, cook the pasta in 2 quarts of boiling water over high heat. Cook 10 minutes or just until pasta is al dente, or slightly tough. Drain.
Add the pasta to the large pot of soup. Simmer 5 -10 minutes more and serve.
