6 - 6 oz. beef steaks
1 cup vegetable oil (or bacon grease or mixture of both)
1 egg
2 cups flour
Salt (to taste)
Pepper (to taste)

Best served with mashed potatoes, cream gravy and biscuits.

Pound the steaks with a mallet to tenderize and slightly flatten and bring them to room temperature. Pour the oil into a large, cast iron skillet.

Beat the egg with 1 tablespoon water and set aside. Put the flour, mixed with salt and pepper, on a surface of wax paper. Dip steaks in egg, one at a time, then in flour, turning to cover. Allow steaks to rest a few minutes to absorb enough of the flour for a good "crust."

While steaks are resting, bring oil and bacon grease to a very high heat. When it gets very hot, turn down a little lower. (It will retain heat. Lowering the heat helps prevent splatters.) Brown five minutes on each side. Turn heat a little lower and cook two to three minutes more on each side. Remove with tongs and drain on paper towels.

Serve with creamy, fluffy mashed potatoes. Boil potatoes and whip and mash together before adding milk, butter and seasonings. Add garlic if you like to the potatoes.

NOTE: Don't forget the cream gravy and biscuits for a true Texas experience!
