1 cup rice
1 can Ro-tel, drained
1 medium onion, chopped
2 cups chicken broth or water
5 tbsp oil
1/2 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp each salt and pepper
1/2 bag frozen mixed vegetables (optional)

Directions:
Directions:
Heat oil in covered skillet, add rice and onion. Cook until brown and toasty, stirring continuously. Add Rotel, continue to stir and cook for 3 minutes. Add liquid, seasoning, and vegetables. Stir well and bring to a boil. Reduce heat, cover and simmer 20-25 minutes. DO NOT RAISE LID!

This recipe is at least 5 generations old. Mama Rose passed it on to my best friend who tried to show me how to do it. The raising lid instruction was added special for me!!
