5 lbs large tomatoes with skin removed and diced, 1 3/4 c sugar, 1 cup raisins, 1 c cider vinegar, 2 crushed cloves garlic, 3 T ginger (powdered), 2 T salt, 1 T crushed red pepper

In large heavy saucepan combine all ingredients. Bring to boil, then simmer uncovered, stirring often, until very thick. About 2 hours. pour into sterilized glass jars and seal tightly. Store in refrigerator or freezer.
