6 to 8 potatoes (or more), chopped
1 lg. onion, chopped
3 tbsp. butter
1 gallon of milk (depends on pan size for amount)
2 tsp. salt and pepper (more if needed)
Water
Optional; Instant potatoes, to thicken

Directions:
Directions:
In lg. stock pot or pan, on low heat, melt 3 tbsps. of butter.
Put onions in and simmer until tender.
Add potatoes and just enough water to cover potatoes. On medium heat, cook until fork tender.

Now, mash some of the potatoes into the bottom of the pan for the thickening effect before adding milk. (Optional; or add some instant potatoes later.)
Add 3 more tbsps.of butter and milk to fill up pot as much as you want. Cook about 1/2 hour. Serve.

On the option, wait until the milk is heated before you add the instant potatoes to help thicken, closer to the time you are going to serve it.
