1 lb. (3 medium sized) yellow squash, chopped
1 medium onion, chopped
5 T. butter, divided
2 T. all-purpose flour
1 c milk
5 slices American cheese, chopped
1 (3 oz.) sliced mushrooms, drained
1/2 c cracker crumbs
1/2 c chopped pecans

Cover squash and onion in boiling salted water, cook covered for 5 minutes, drain and set aside.

Melt 3 T butter in heavy saucepan over low heat, add flour. Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly until thickened and bubbly. Add cheese and stir until melted.

Combine squash mixture, cheese sauce and mushrooms, spoon into a lightly greased 1 1/2 quart casserole dish.

Melt 2 T butter in a small saucepan. Stir in cracker crumbs and pecans. Sprinkle mixture over squash. Bake at 350 for 30 minutes.
