1 1/2 c whole wheat flour
2 tsp baking powder
2 c dark brown sugar
4 eggs at room temperature
2 tbsp butter at room temperature
1/4 tsp black walnut extract
1 1/2 c walnuts, finely chopped

Directions:
Directions:
Preheat oven to 350º Fahrenheit.

Combine sugar, eggs and butter in the bowl of a stand mixer fitted with a paddle attachment. Mix until light and fluffy. Add walnut extract.

Sift flour, baking powder and salt in a separate bowl. Fold dry ingredients into wet ingredients, mixing only until combined. Add walnuts and mix well.

Spray mini muffin pans with nonstick cooking spray such as Pam. Bake for 15 minutes or until a tester comes out clean.

These are delicious. We used to enjoy them when we went to the Odessa Country Club as a family. I think they still serve them.
