1 yellow cake mix
4 eggs
1 package vanilla instant pudding
¾ cup oil
¾ cup sherry
1 teaspoon nutmeg

Beat all ingredients together for 2 minutes.

Pour into a greased and lightly floured Bundt pan. Bake at 350 degrees 45 minutes or so (until a toothpick inserted into the middle of the cake comes out clean--but don’t overbake). (Since every cake mix now seems to come with pudding already in it, I keep wondering if we can just omit the vanilla pudding from the recipe--which comes from the 1960’s).

I got this recipe from Betty Sacknitz, with whom I used to teach at Grace Davis High School. Betty was a big lady with a big voice. One day in my second year of teaching, she burst into my classroom and accused me of taking the movie projector from her classroom. I hadn’t. It was a tense moment, and the students were very interested. Betty and I became good friends afterwards, and she gave me this recipe, which has become an old standby of the family.
